Monthly Feature: Recipes from Little Creede!
If you’ve read any of CiCi’s Brides of Little Creede series, you know the heroines and womenfolk of that little silver mining town loved to cook. We thought it’d be fun if one of these intrepid and talented cooks include a favorite recipe in a newsletter now and then. So, for this issue, we asked Retta Carter, Little Creede’s very own Substitute Wife, to share her recipe for Hoecakes. A personal favorite of menfolk and children alike, they are easy to make and so very yummy!
Hello, folks! Retta Carter, here. I’ve been asked so many times for my Hoecake recipe, and I’m happy to share it with everyone. If you like cornbread and honey, you’ll love having a stack of these cakes on your breakfast table!
- 1 1/2 cups cornmeal
- 1/2 cup flour
- 2 cups buttermilk
- 2 eggs
- 1 teaspoon Rumford (baking powder)
- 1/2 teaspoon salt
- 3 tablespoons of bacon grease. Use more as needed for frying
The Easy Directions:
Stir together the cornmeal, flour, baking powder, and salt in a medium bowl.
In a separate large bowl, whisk the eggs and buttermilk together.
Stir the cornmeal mixture into the wet ingredients until the batter is smooth.
Let the hoecake batter rest for about 10 minutes, to thicken. (You’ll probably have to tell your family to ‘hold their hosses’ at this point!)
Add the bacon grease to your skillet, and set it on the stovetop at medium high heat.
When the grease is hot enough to fry, place large spoonfuls of the batter into the skillet. Fry the cakes until bubbles appear on the tops and their edges are cooked. Then flip each of the cakes and cook the other side until they’re golden brown. Repeat with the remaining batter.
Serve with butter and honey (Addie’s favorite toppings!)
